Thread: Chefs and those who cook come to my aid! I need ideas for a dish for a dinner party..

    Default Chefs and those who cook come to my aid! I need ideas for a dish for a dinner party..

    I'm hosting members of the Engineers Without Borders team over at my house on Wednesday and the project leader and I had an idea to make it into a meeting/dinner party idea. First of all, she and I are the only vegetarians in the group (that I'm aware of) and we wanted to make a dish together. Second of all, I'm absolutely infatuated with her so I mean, that's cool.

    We need ideas for a dish we can serve when everyone comes over here (about 10 people)

    Requirements:
    • Must be vegetarian
    • Must be cheap
    • Must be able to be able to feed like 10 people


    I don't want to resort to the easy pasta dish.

    I once made crab cakes, except instead of crab I used squash. You could try that. Or a vegetarian pizza, or a soup, or fried avocado or something.

    Well... I know plenty of Indian vegetarian dishes that could feed 10+ people easily.

    A casserole of some sort would also work, like lasagna or a vegetarian moussaka. You could also try falaffel if you're brave. If you're really brave, you could try making malai kofta... but that won't scale up so easily.

    Regardless, find something that either is dairy or bean rich (for substance), something that scales up easily (like something that's mixed up like a saute or stew, or is layered like a casserole), and maybe incorporates other substantial tasting and thickening veggies like okra, eggplant, tomatoes (really fruits, but whatever) and mushrooms (yeah, not vegetables, but for culinary purposes they are).

    Although not quite vegetarian, and not quite a full dish (more of an appetizer), I would suggest a spinach artichoke dip. My aunt and uncle made it over New Years, and it was phenomenal. It does call for dairy, however I'm sure there are a few recipes out there that allow a substitute. Maybe tofu or something instead of the ricotta it calls for?

    I find it funny that vegetarians have no problem forcing others to eat vegetarian. Two people in a group of ten get to dictate what the others eat. That said, make veggie pot pies.

    Get two frozen pie shells for every pie. Mix together a can of cream of mushroom, cream of celery, and a can of veggie blend (I use vegall.) Pour this goop into one of the pie shells and put the other on top. Bake until done.

    Or you can make some bean chili.

    Mix all this together and heat.

    Though I have been forced to eat veggie before so the point still stands. I didn't mind though because some veggie food rocks.

    Speaking of which, a nice mushroom stroganoff wouldn't go amiss.

    I have never seen anyone who eats meat get upset that only vegetarian options are present, but I have seen vegetarians get upset when there is one meat option.

    Mousaka is pretty fantastic, i must say

    there are a number of soups (one czech one i think i can't remember the name of, and some soup called a 'rockin morroccan soup' that was also delicious) that are tasty, but i guess soup is out of the question

    i would go for the mousaka, personally, or maybe a quiche

    or vichysoisse if you're just that classy

    Dorry. It was sorta late and I wasn't thinking of the differentiation between the two. So that means the dip would be a perfect appetizer then. Just make sure you've got some nice hearty tortilla chips on hand (the lightly salted, restaurant style), as they make the best match with the stuff.

Then buy some Annie's artichoke parmesan vinegar-free fuckin delicious salad dressing at your local health food store. You can always cook up some Quorn chicken (the one that is stuffed with gruyere cheese) and slice some of that on top for those that are interested, but if no one brings anything veggie-friendly for you guys, at least you'll have a protein to go on or accompany the salad

    This is gonna sound less tolerant than I actually am IRL, but I have to say Vegetarians are kind of pussies. Not because of their choice to not eat meat, but because I eat shit I don't like all the time, be it because its all I have, or to be polite, or some other reason. I don't like my fair share of foods, there are lots of things I choose not to eat given the opportunity, but if someone puts a burger with mayo on it in front of me(I hate mayo), I'll either wipe the mayo off the bun as much as I can, or I'll just eat the damn thing. Most of the vegetarians I have met will just complain and not eat whatever it is, or they wont pick the meat out.

    I just don't see why vegetarians cant just make do with what they get, like the rest of us. Although, this is in no way an anti-vegetarian statement. I don't care what people eat, it doesn't affect me. However, if I were making something for a potluck and I knew there would be vegetarians there, I would trust them to bring their own food if they don't want mine. I don't mind if you don't eat meat, but don't expect me to have other options for you when I am perfectly happy to eat my hamburger. I guess I'm just saying that if you have special food requirements, that's your problem, not mine. I'm not making a veggie dish for the same reason you arent making a meat dish, because I won't eat it.

    If you're a vegetarian for a while and then eat meat.. you get sick. It's not like a spur-of-the-moment thing you can decide to switch back to. It's generally very easy to eat Vegetarian in the U.S. Most restaurants have at least 2 or so options.

    When I go back to Nicaragua this summer, I will be eating meat again to ensure I actually have things to eat. In order to do that I have to give myself a month or so of progressively eating more and more meat.
