Weight isn't the only thing to be careful of. When was the last time you had blood work done? Body builder's and athletes that use supplements like whey protein can fall victim to high cholesterol due to the fact protein sups are somewhat high in cholesterol. That's why you should be careful and use it as a supp, not as a main source of protein.

As for the muscle without definition, you need to deplete yourself. Cut out carbs for a few days and do your workout with cardio and see some new veins and lines while you are depleted. Its really cool.

A few weeks ago. My cholesterol is actually down ten points.

My main source of protein is all lovely chicken, disgusting cottage cheese, and various forms of potatoes (not fried).

Potatoes are starch, largely carbohydrates. Choose a different source of protein.

The chicken and a low/no fat cottage cheese are great though. I do Tuna (white albacore in water) mixed with cottage cheese.

Well, in general potatoes are very nutritious, and even though they don't have a ton of protein, their protein quality is very high.

So I advocate potato consumption in general for everyone, even though I don't know about them as a primary source of protein

If you don't like them, then get the fuck out.
