No, don't use a knife. It MIGHT make someone second-guess their intentions, that is true of any weapon, but if it doesn't, then having the knife in the situation makes it much more dangerous for you. Unless you are a trained knife-fighter (which frankly is a pretty stupid skill to waste your time on), then a physical altercation involving a knife could is quite likely to end up with YOU, not the other guy, getting stabbed. Most self-defense instructors will tell you the same thing. Idiots who carry a knife for self-defense are putting themselves in more danger than if they didn't have any weapon at all.

Still, any knuckle dusters you can slip in your back pocket would probably be easier to find and cheaper.
Also quite illegal to carry (not necessarily to own, but to carry... even with a CWP) in many states, whereas sap gloves are more likely to be legal to carry around. Though as I said earlier, wearing them around is still pretty dumb.
