This reminds me of a few.

For a quick/lazy snack I like to mix together a tin of tuna, some sliced baby tomatoes, some saladcream and a fair amount of balsamic.

Lovely, although I usually go overboard on the balsamic, so it's quite vinegary. I love that shit though.

Also, avacadoes and balsamic is amazing.
Any salad dressing works with avacados I think, but balsamic based ones are best.
Honey and mustard dressing comes second.
