In modern times when all we have access to is industrially produced meats that may be true, but trust me, my sewer, traditional Pronvoncal coq au vin is toujours made with rooster.
The original reason why the dish was developed is because old, impotent roosters have delicious meat that's also tough as hell and thus difficult to eat. By soaking the rooster in wine, you can render the flesh soft enough to eat, as I said en francais.
