Well, what are the definitions, and who decided on them? Are they universally accepted? And again, what difference does it make whether or not they're sentient and self-aware?

I'm guessing that their point is that an animal living its entire life in captivity just to service the dairy industry, and being killed as soon as its production goes down is what is cruel. Or maybe they feel that the milking process itself is not as humane as it could or should be.
