Does anyone make their own jerky?

I used to make it with a cheap dehydrator, but it never really turned out right. I mean, it's still jerky so it was good, but I'm looking to expand. At Cabela's, they have a Jerky Gun that allows you to squeeze out small strips on a cookie sheet and bake it.

They are good, but greasy and taste sort of generic. It's a cheap alternative, but I'm not impressed with their seasonings.

Another route would be a real smoker/dehydrator which is not cheap. My uncle bought two industrial dehydrators and if he was closer, it'd be a lot more convenient.

Your thoughts?
