Outside of the 6 individual DVD sets and the movie, are there any other DVD's of this series out or nay? (I'm not a fan of anime at all really, just that this one stuck out the most to me because of its Spaghetti Western and western culture feel, which, as a film person, I'm a fan of.)

I'd have to agree with Cowboy Bebop. I don't watch a whole lot of Anime but Bebop is awesome.
I also love the Gundam series. Mainly Wing and 8th Team.

It's the show that got me into the whole anime thing in the first place. Well that and DBZ. So I'm kind of biased I suppose. In my opinion, yes, it is that good.

I've been watching To Love-Ru and Soul Eater lately, and they are both very good.
I've started watching Elfen Lied. It crazy, I highly recommend it.
I'm about to finish the last episode of the Higurashi no Naku Koro ni (Kai) series. A damn good anime.
I gotta say that Paranoia Agent was fantastic, I really like the whole head trip kinda genre. Right now I am watching Desert Punk and though perverted, it's awesome. I don't think I've ever laughed this hard at an anime.
I'm a DragonBall fan, all of them...even GT (well...sort of)
EDIT: I also had all of Full Metal Alchemist on my HD but I never got round to watching it before I had to wipe it. I do know it's supposed to be good though.

Anime died with DBZ and Cowboy Bebop. From there on out it died a horrible, slow, miserable death.
You clearly know nothing about anime then.
They are re-mastering Dragonball Z with improved artwork, re-doing the voices (with the original voice actors and sound effects, and cutting out all of the filler crap that wasn't part of the main series to make it 100 episodes. All for it's 20th anniversary. It's still only at episode 5 in Japan, but if you want it it's being released under the name "Dragon Ball Kai"
Also they are remaking Full Metal Alchemist to actually follow the manga, and re-doing the art/sound effects and stuff. I never read the manga, so I don't know what's different, but it must be significant if they are bothering to release a new series for it. It's also out to about episode 5 in Japan, and under the name "Full Metal Alchemist Brotherhood." So far it looks more or less the same to me, but the series is so good that I would be fine just watching it again anyway.

Although I am only caught up on Bleach.
I saw someone call Bleach a suckfest and comparing it to Naruto somewhere in this thread, and I just want to say that it is nothing like Naruto and is one of the best Jump actioners of all time. It actually has character depth and plot development.
Well, that isn't so much a problem anymore. It was a little busy in the beginning, but now that we're 200+ episodes in we've gotten a chance to get to know everybody. There's a character for everybody. My personal favorites are Kenpachi (of course), Madarame, Kisike, Tessai, Chad, and Kyoraku.
Also, DBZ Burst Limit was pretty awesome, but it was too short and there weren't enough characters.
Bleach has gotten really freaking cool, and pretty intense too. I look forward to every new episode, even though right now I must admit there are a few too many things going on at the same time (there are four fights in one place, a big fight with Ichigo in another place, and the top three espada, most of their fraccion, all of the captains who aren't trapped in Hueco Mundo, and the three defected captains just standing around threatening each other playfully as of the moment)
In the newest chapter of the Bleach manga Hitsugaya gets cut in half! It's about time that annoying bastard went down.
